I'm not going to spend 1,000 words here analyzing the UTSA's RB depth situation or who they've offered in the 2018 class or what RB prospects would be the best fit for the roster going forward, I just want to throw this kid's name out there and see what other think of him on his own merits.
Braxton George (Westmoore - Oklahoma City, OK) isn't a big guy. His MaxPreps page lists him at 5'9" 174, so he's probably about the size Jalen Rhodes was at the same age. As a junior playing for a school in Oklahoma's top classification (6A-Division I), he carried the ball 126 times for a team-leading 1,122 yards (8.9 yards/carry) and 15 TDs, and also caught 10 passes for 221 yards and 2 TDs. I really like what I've seen of him on film, but I have no idea if anyone is recruiting him. As far as I can tell he doesn't have a Twitter account and none of the major recruiting sites have a profile on him.
EDIT: He does have a Twitter account (@BGxCinco), and he reported receiving his first offer from Abilene Christian two weeks ago, and another from Central Oklahoma last week. He has also apparently visited South Dakota State this spring. Based on that and his Twitter followers, it seems most of his current serious interest is from the FCS and Division II levels.
Check out the burst he shows on the first play, and the catch and body control he shows on a wheel route in the play that starts at about the 0:52 mark; and the kickoff return(?) at about the 1:54 mark where he weaves into and out of a crowd, gets to the sideline, and makes a cut to elude a defender and keeps running without losing much speed and without being caught by the defenders in hot pursuit of him.
He has shown decently good track speed: he ran a 22.64 200m this season, was a member of a 4x100m relay team that ran a 42.26 and finished 4th at Oklahoma's state meet, and he ran the 3rd leg of a 4x200m relay that ran a 1:27.63 and finished 3rd at the state meet. But he looks like a guy who more than plays up to his track speed on the football field, something you can't say for many accomplished track runners.
He's got a bit of Jalen Rhodes and a bit of Austin Walter (Crosby High / Rice) to him. On his Hudl film he doesn't look like someone who's ever going to hold 210+ pounds, but he can do some things on the football field with the ball in his hands. If you're a FBS college team you don't want too many of your RBs to be his size, but having one or two who can make plays in multiple phases with their speed and quickness and without being 220 pounds can be nice. See: UTEP's use of former high school RB Walter Dawn (listed size: 5'7" 160), who played mostly WR as a true freshman and, um, scored 3 times and had 112 yards from scrimmage against UTSA last season.
